Numbri-muffinid
- Alloleva retsepti katsetasin läbi Renate 14. sünnipäevaks. Tõlkimisega läheb veel veidi aega, kuid pärit on asi Martha Stewartilt :)
- 2 1/4 cups all-purpose flour = 240+30 g
- 2 1/4 cups sugar = 400+50 g
- 1 cup plus 2 tablespoons unsweetened cocoa powder = 100 g
- 2 1/4 teaspoons baking soda
- 1 teaspoon baking powder
- Salt
- 3 large eggs
- 1 cup plus 2 tablespoons warm water = 238 ml
- 1 cup plus 2 tablespoons low-fat buttermilk = 238 ml
- 1/4 cup plus 1 1/2 teaspoons safflower oil = 60 ml
- 1 1/2 teaspoons pure vanilla extract
- Preheat oven to 350 degrees. Line mini muffin tins with baking cups. Sift flour, sugar, cocoa, baking soda, baking powder, and 1 teaspoon salt into a large bowl. Mix in eggs, warm water, buttermilk, oil, and vanilla, scraping down sides of bowl, until smooth, about 3 minutes.
- Working in batches, divide batter evenly among cups, filling each two-thirds full. Bake, rotating tins halfway through, until tops spring back when pressed with a finger, about 20 minutes. Let cupcakes cool completely on a wire rack.
- Using a pastry bag fitted with a fine star tip, pipe buttercream onto cupcakes to decorate.
Ingredients
- 2 1/4 cups sugar = 400+50g
- 10 large egg whites, room temperature
- Pinch of salt
- 8 sticks unsalted butter, room temperature, cut into small pieces = 8*113,5=908g
- 1 tablespoon pure vanilla extract
- Gel-paste food coloring (optional; nycake.com)
Directions
- Heat sugar, egg whites, and salt in a heatproof mixer bowl set over a pan of simmering water, whisking, until sugar dissolves, about 2 minutes.
- Return bowl to mixer, and whisk, gradually increasing speed from low to medium-high, until stiff, glossy peaks form, about 10 minutes. Reduce speed to medium. Add butter, a few pieces at a time, whisking well after each addition. Whisk in vanilla. Switch to a paddle attachment. Beat until air bubbles are gone, 2 to 3 minutes more.
- Beat in food coloring, 1 drop at a time, until desired color is achieved. (If making more than 1 color, divide buttercream and work in batches.)
